Moth Beans – 1/2 cup, 1 large onion finely chopped, 1 medium size tomato chopped, 2 pinch asafoetida, 1 tsp mustard seeds, 1/2 tsp cumin, 1 tsp red chilli powder, 1 tsp garam masala powder, 1/2 tsp turmeric powder, 1 to 2 tbsp grated coconut, 2 tsp oil, salt to taste, coriander leaves for garnishing, lemon slices for garnishing
Wash the moth beans once and soak them overnight.
Wash it twice more thoroughly with water in the morning. Sprinkle some water on top and keep it in a tight container and leave it for a day so that it sprouts.
Now these beans are ready to use.
To make Matki Usal
Keep the pan on the gas for heating. After this, add oil to it and temper the mustard seeds.
After this, add cumin, asafoetida, onion and fry it till it becomes golden.
As soon as the color of the onion changes, add tomatoes and cook it till it becomes soft.
Now it is the turn to put red chili, garam masala powder, turmeric powder in it. Cook it till its water dries up.
Now put the sprouted moth beans in it. Also grated coconut and salt. Mix everything well.
If it seems too dry, then add half a cup of water and cover and cook for a while, so that it becomes flaky.
– Matki is ready, serve by adding coriander leaves and lemon pieces on top.
