Material :

Flour – 2 cups, Ghee or Butter – 1/4 cup, Salt – a pinch, Cold water – for kneading the dough
for stuffing
Khoya – 200 grams, cardamom powder – 1/2 tsp, finely chopped dry fruits – 2 tbsp, powdered sugar – 3/4 cup
for syrup
Sugar – 1 cup, Water – 3/4 cup, Cardamom powder – 1/2 tsp, Saffron threads – 5-7
other material
Ghee – for frying, Dry fruits for garnishing, Saffron – for garnishing, Silver foil – for garnishing, Dry rose leaves – for garnishing

Method :

to knead the dough
In a bowl, add flour, ghee, salt and mix it well with dry hands first.
Now gradually adding cold water, knead the dough. Then cover it and do the rest of the preparation, by then the dough will be set.
to prepare the filling
– Heat the pan. Add khoya to it and fry it well. The sign of the khoya being roasted is that it starts leaving the sides of the pan.
After this, the gas will be turned off. After that add cardamom powder, dry fruits and powdered sugar in it.
for syrup
Put sugar and water in a vessel and keep it for heating.
Cook it till one string syrup is obtained. You can check it in between by taking a drop on the fingers.
After turning off the gas, cardamom powder, saffron threads have to be mixed in it.
Shortbread preparation
Knead the dough well one more time. Divide it equally into 10-12 parts.
Roll it lightly and fill it with mawa filling. After this, close it from all sides and roll it a little with light hands. It doesn’t have to be too thin.
– Heat ghee or oil in a pan.
Fry the rolled kachoris according to the oil, one or two by one, till they become golden from both the sides.
For serving, take out the kachoris in a plate and let them cool slightly.
– Heat the syrup lightly.
After this dip the kachoris in the syrup and with the help of a spoon take them out on a plate.
Serve by adding chopped dry fruits, rose leaves, silver foil and saffron threads on top.
Hot Mawa Kachori is ready for serving.
